Homemade Raspberry-Lime Rickey
This refreshing DYI soda is a gorgeous crimson color with a deep raspberry flavor with the brightness of fresh lime.
Yields: 6 servings
Love the fizzy stuff but hate lugging home cases of seltzer? A carbonation system in the next best thing to a personal soda fountain. Owning a machine like the SodaStream ($79-199, sodastream.com) can save you money in the long run, and your drink will be ready in about a minute.
INGREDIENTS:
2 cups raspberries (fresh, or frozen and thawed), plus more for garnish, optional
1/2 cup filtered water
4 1/2 Tbsp lime juice, divided
3 Tbsp maple syrup
2 Tbsp agave nectar
Seltzer or soda water
PROCEDURE:
Put 2 cups raspberries, water, 3 tablespoons lime juice, maple syrup, and agave in a medium-size saucepan. Cover and bring to a gentle boil over medium-high heat, then reduce heat to low and simmer uncovered for 10 minutes. Remove from heat and let it rest for 15 minutes. Pour through a strainer lined with a double layer of cheesecloth and squeeze to extract as much liquid as possible.
Add remaining lime juice and chill the mixture in a sealed glass jar in the fridge.
SERVICE
To serve, pour 1/4 cup syrup into a tall glass, top with 6 to 8 ounces chilled seltzer or soda water, and stir. Garnish with raspberry, if desired.
LEFTOVER STORAGE
Store in a sealed glass jar in the fridge for up to 1 week.
